Description
Delicious apple cinnamon crepes that are vegan and gluten-free.
Ingredients

- 1 cup gluten-free flour
- 1 cup almond milk
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 2 apples, peeled and sliced
- 1 tablespoon coconut oil
- Pinch of salt
Instructions
- In a bowl, mix gluten-free flour, almond milk, maple syrup, vanilla extract, cinnamon, and salt until smooth.
- Heat a non-stick skillet over medium heat and add a little coconut oil.
- Pour a small amount of batter into the skillet and swirl to cover the bottom.
- Cook for 2-3 minutes until the edges lift, then flip and cook for another minute.
- Repeat with remaining batter.
- In a separate skillet, sauté sliced apples with cinnamon and a bit of coconut oil until soft.
- Fill crepes with sautéed apples and roll them up.
- Serve warm.
Notes
- Adjust sweetness to your taste.
- Store leftovers in the refrigerator.
- Reheat in a pan before serving.
