Description

Delicious apple cinnamon crepes that are vegan and gluten-free.


Ingredients

  • 1 cup gluten-free flour
  • 1 cup almond milk
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 apples, peeled and sliced
  • 1 tablespoon coconut oil
  • Pinch of salt

Instructions

  1. In a bowl, mix gluten-free flour, almond milk, maple syrup, vanilla extract, cinnamon, and salt until smooth.
  2. Heat a non-stick skillet over medium heat and add a little coconut oil.
  3. Pour a small amount of batter into the skillet and swirl to cover the bottom.
  4. Cook for 2-3 minutes until the edges lift, then flip and cook for another minute.
  5. Repeat with remaining batter.
  6. In a separate skillet, sauté sliced apples with cinnamon and a bit of coconut oil until soft.
  7. Fill crepes with sautéed apples and roll them up.
  8. Serve warm.

Notes

  • Adjust sweetness to your taste.
  • Store leftovers in the refrigerator.
