Description

A comforting dish featuring tender chicken thighs braised in sweet and tangy apple cider, enhanced with fresh herbs.

Ingredients

  • Chicken thighs: 4 pieces, bone-in and skin-on
  • Apple cider: 2 cups (preferably fresh)
  • Onions: 2 medium, sliced
  • Garlic: 4 cloves, minced
  • Fresh thyme: 2 teaspoons (or 1 teaspoon dried thyme)
  • Fresh rosemary: 2 teaspoons (or 1 teaspoon dried rosemary)
  • Salt: 1 teaspoon (or to taste)
  • Pepper: 1 teaspoon (or to taste)
  • Olive oil: 2 tablespoons

Instructions

  1. Pat the chicken thighs dry with paper towels and season with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat and sear the chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and cook for an additional 3-4 minutes, then remove from skillet.
  3. Add sliced onions to the skillet and sauté for about 5 minutes until translucent. Add minced garlic and cook for another minute.
  4. Stir in fresh thyme and rosemary, then pour in the apple cider, scraping the bottom of the skillet to deglaze.
  5. Return the chicken thighs to the skillet, skin-side up, bring to a simmer, cover, and braise on low heat for 30-35 minutes.
  6. Remove the chicken and let it rest. If desired, increase heat to medium-high to reduce the sauce for 5-10 minutes.
  7. Adjust seasoning of the sauce if necessary, then serve the chicken with the sauce drizzled over it.

Notes

  • For best results, use bone-in and skin-on chicken thighs.
  • Choose fresh, unfiltered apple cider for optimal flavor.
  • Feel free to add seasonal vegetables like carrots or Brussels sprouts for added nutrition.
