A comforting dish featuring tender chicken thighs braised in sweet and tangy apple cider, enhanced with fresh herbs.
Ingredients
- Chicken thighs: 4 pieces, bone-in and skin-on
- Apple cider: 2 cups (preferably fresh)
- Onions: 2 medium, sliced
- Garlic: 4 cloves, minced
- Fresh thyme: 2 teaspoons (or 1 teaspoon dried thyme)
- Fresh rosemary: 2 teaspoons (or 1 teaspoon dried rosemary)
- Salt: 1 teaspoon (or to taste)
- Pepper: 1 teaspoon (or to taste)
- Olive oil: 2 tablespoons
Instructions
- Pat the chicken thighs dry with paper towels and season with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat and sear the chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and cook for an additional 3-4 minutes, then remove from skillet.
- Add sliced onions to the skillet and sauté for about 5 minutes until translucent. Add minced garlic and cook for another minute.
- Stir in fresh thyme and rosemary, then pour in the apple cider, scraping the bottom of the skillet to deglaze.
- Return the chicken thighs to the skillet, skin-side up, bring to a simmer, cover, and braise on low heat for 30-35 minutes.
- Remove the chicken and let it rest. If desired, increase heat to medium-high to reduce the sauce for 5-10 minutes.
- Adjust seasoning of the sauce if necessary, then serve the chicken with the sauce drizzled over it.
Notes
- For best results, use bone-in and skin-on chicken thighs.
- Choose fresh, unfiltered apple cider for optimal flavor.
- Feel free to add seasonal vegetables like carrots or Brussels sprouts for added nutrition.
