Ingredients
- All-purpose flour: 2 cups (240 grams)
- Canned pumpkin puree: 1 cup (240 grams)
- Brown sugar: 1/2 cup (100 grams), packed
- Baking powder: 2 teaspoons
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- Salt: 1/2 teaspoon
- Butter: 1/4 cup (60 grams), cold and cubed
- Heavy cream: 1/4 cup (60 ml), plus extra for brushing
- Optional glaze: Powdered sugar – 1 cup (120 grams) and milk – 1-2 tablespoons
Instructions
- Gather all your ingredients and tools.
- In a large mixing bowl, combine the all-purpose flour, brown sugar, baking powder, ground cinnamon, ground nutmeg, and salt. Whisk until well mixed.
- Add the cold, cubed butter to the flour mixture and cut it in until it resembles coarse crumbs.
- Turn the dough out onto a lightly floured surface and pat it into a circle about 1 inch thick. Cut into 8 equal triangles.
- Preheat the air fryer to 320°F (160°C) for about 5 minutes. Place the scone triangles in the air fryer basket in a single layer and brush the tops with heavy cream.
- Air fry the scones for 12-15 minutes, or until golden brown and a toothpick inserted comes out clean.
- Remove the scones from the basket and let them cool on a wire rack. Drizzle with optional glaze if desired.
- Serve warm or at room temperature.
