- 1 cup pumpkin puree
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup graham cracker crumbs
- 2 large eggs
- Cooking spray
Instructions
- Prepare the cheesecake mixture by combining softened cream cheese and pumpkin puree in a large mixing bowl and blend until smooth.
- Add granulated sugar, vanilla extract, ground cinnamon, and ground nutmeg to the mixture and mix well. Then, add eggs one at a time, mixing after each addition.
- Form small rounds of the mixture, roll them in your hands, and then coat each ball in graham cracker crumbs.
- Preheat the air fryer to 320°F (160°C) and grease the basket with cooking spray. Place the bites in a single layer and air fry for 8-10 minutes until golden brown.
- Let the bites cool for a few minutes before serving, optionally dusting with cinnamon.
