Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup graham cracker crumbs
  • 2 large eggs
  • Cooking spray

Instructions

  1. Prepare the cheesecake mixture by combining softened cream cheese and pumpkin puree in a large mixing bowl and blend until smooth.
  2. Add granulated sugar, vanilla extract, ground cinnamon, and ground nutmeg to the mixture and mix well. Then, add eggs one at a time, mixing after each addition.
  3. Form small rounds of the mixture, roll them in your hands, and then coat each ball in graham cracker crumbs.
  4. Preheat the air fryer to 320°F (160°C) and grease the basket with cooking spray. Place the bites in a single layer and air fry for 8-10 minutes until golden brown.
