Ingredients
- Halloumi cheese – 250 grams, cut into cubes
- Sweet potatoes – 2 medium, peeled and diced into chunks
- Olive oil – 2 tablespoons
- Salt – to taste
- Black pepper – to taste
- Paprika – 1 teaspoon
- Fresh greens (such as spinach or arugula) – 2 cups
- Pomegranate seeds – 1/2 cup (for garnish)
- Tahini – 2 tablespoons (for drizzling)
- Lemon juice – 1 tablespoon (optional, for added flavor)
Instructions
- Prepare the sweet potatoes by peeling and dicing them into bite-sized chunks. Toss with olive oil, salt, black pepper, and paprika.
- Prepare the halloumi by cutting it into 1-inch cubes and tossing with olive oil, salt, and black pepper.
- Preheat the air fryer to 200°C (400°F). Cook the sweet potatoes for 15-20 minutes, shaking halfway through.
- Add the halloumi to the air fryer and cook for 8-10 minutes, shaking halfway through.
- Assemble the bowl with a bed of fresh greens, topped with sweet potatoes, halloumi, pomegranate seeds, tahini, and lemon juice.
