Ingredients

  • Halloumi cheese – 250 grams, cut into cubes
  • Sweet potatoes – 2 medium, peeled and diced into chunks
  • Olive oil – 2 tablespoons
  • Salt – to taste
  • Black pepper – to taste
  • Paprika – 1 teaspoon
  • Fresh greens (such as spinach or arugula) – 2 cups
  • Pomegranate seeds – 1/2 cup (for garnish)
  • Tahini – 2 tablespoons (for drizzling)
  • Lemon juice – 1 tablespoon (optional, for added flavor)

Instructions

  1. Prepare the sweet potatoes by peeling and dicing them into bite-sized chunks. Toss with olive oil, salt, black pepper, and paprika.
  2. Prepare the halloumi by cutting it into 1-inch cubes and tossing with olive oil, salt, and black pepper.
  3. Preheat the air fryer to 200°C (400°F). Cook the sweet potatoes for 15-20 minutes, shaking halfway through.
  4. Add the halloumi to the air fryer and cook for 8-10 minutes, shaking halfway through.
