Description

Delicious and fluffy egg bites made in an air fryer.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped spinach
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 275°F (135°C).
  2. In a bowl, whisk together the eggs, cottage cheese, salt, and pepper.
  3. Add the shredded cheese, bell peppers, and spinach to the egg mixture.
  4. Pour the mixture into silicone molds or muffin cups.
  5. Place the molds in the air fryer basket.
  6. Cook for 15-18 minutes until set.
  7. Remove from air fryer and let cool for a few minutes before serving.

Notes

  • For extra flavor, add cooked bacon or sausage.
  • Store leftovers in the refrigerator for up to 4 days.
