Description
Delicious and fluffy egg bites made in an air fryer.
Ingredients

- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded cheese
- 1/4 cup diced bell peppers
- 1/4 cup chopped spinach
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 275°F (135°C).
- In a bowl, whisk together the eggs, cottage cheese, salt, and pepper.
- Add the shredded cheese, bell peppers, and spinach to the egg mixture.
- Pour the mixture into silicone molds or muffin cups.
- Place the molds in the air fryer basket.
- Cook for 15-18 minutes until set.
- Remove from air fryer and let cool for a few minutes before serving.
Notes
- For extra flavor, add cooked bacon or sausage.
- Store leftovers in the refrigerator for up to 4 days.
- Reheat in the air fryer for a few minutes before serving.
