A healthy vegan recipe for 1 pot lentil dal.
Ingredients
Scale
- 1 cup lentils
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp turmeric powder
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 4 cups vegetable broth
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse lentils under cold water.
- In a pot, heat some oil and sauté onion until translucent.
- Add garlic and ginger, cook for 1 minute.
- Add tomatoes, turmeric, cumin, and coriander. Cook until tomatoes soften.
- Add lentils and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 20-25 minutes or until lentils are tender.
- Add salt to taste and garnish with cilantro before serving.
Notes
- Serve with rice or naan.
- Add more water for a soupier consistency.
- Adjust spices to your preference.
