Description

A healthy vegan recipe for 1 pot lentil dal.


Ingredients

Scale
  • 1 cup lentils
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 4 cups vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, heat some oil and sauté onion until translucent.
  3. Add garlic and ginger, cook for 1 minute.
  4. Add tomatoes, turmeric, cumin, and coriander. Cook until tomatoes soften.
  5. Add lentils and vegetable broth. Bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes or until lentils are tender.
  7. Add salt to taste and garnish with cilantro before serving.

Notes

  • Serve with rice or naan.
  • Add more water for a soupier consistency.
  • Adjust spices to your preference.
